Description
Creamy jerk shrimp pasta is a bold and comforting one-pot meal made with seasoned shrimp, penne or fettuccine, and a spicy-cheesy sauce.
Ingredients
1 lb large shrimp, peeled and deveined
12 oz penne or fettuccine pasta
2 tbsp jerk seasoning
1 tbsp olive oil
1 tbsp butter
3 cloves garlic, minced
1/2 cup diced onion
1/2 cup diced bell pepper (red or green)
2 cups chicken broth
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 cup shredded mozzarella cheese
Salt and pepper to taste
Green onions or parsley (optional, for garnish)
Instructions
1. Heat olive oil and butter in a large pot over medium heat. Add shrimp, season with jerk seasoning, and cook for 2-3 minutes per side. Remove and set aside.
2. In the same pot, add garlic, onion, and bell pepper. Sauté until softened.
3. Add chicken broth, heavy cream, and uncooked pasta. Stir and bring to a boil. Reduce heat and simmer for 10-12 minutes, stirring occasionally.
4. Once pasta is cooked, stir in Parmesan and mozzarella cheese until melted and creamy.
5. Return shrimp to the pot, stir to combine, and cook for 1-2 minutes.
6. Season with salt and pepper. Garnish with green onions or parsley if desired. Serve hot.
Notes
Use coconut milk instead of cream for a tropical twist.
Try mild jerk seasoning for a less spicy version.
