Description
A light and flavorful chicken pasta recipe without cream. Made with garlic, olive oil, broth, and fresh herbs—perfect for weeknight dinners.
Ingredients
2 boneless chicken thighs
8 oz penne pasta
1 cup chicken broth
1/2 cup cherry tomatoes (halved)
1/4 cup reserved pasta water
2 cloves garlic, minced
1/4 onion, diced
2 tbsp olive oil
Salt and pepper to taste
Fresh basil or parsley for garnish
Instructions
1. Boil pasta in salted water, reserve 1/2 cup water and drain.
2. Sear seasoned chicken in olive oil until golden, then set aside.
3. Sauté garlic and onion until soft.
4. Add cherry tomatoes and cook until slightly blistered.
5. Pour in chicken broth and pasta water, reduce by half.
6. Add cooked pasta and chicken, toss to coat.
7. Adjust seasoning, garnish with herbs, and serve.
Notes
You can substitute cherry tomatoes with roasted red peppers.
For a dairy-free version, skip cheese entirely or use nutritional yeast.
Leftovers can be stored in an airtight container for up to 3 days.
