Description
Chicken pasta recipe no cream made easy with bold flavors, fresh veggies & tender chicken. A healthy, satisfying pasta dish ready in 35 minutes!
Ingredients
1 lb boneless, skinless chicken breast, diced
8 oz penne or fusilli pasta
2 tbsp olive oil
1 medium onion, chopped
3 garlic cloves, minced
1 red bell pepper, sliced
1 zucchini, sliced
1 can (14.5 oz) diced tomatoes
1/2 cup low-sodium chicken broth
1 tsp Italian seasoning
1/2 tsp red pepper flakes (optional)
Salt and black pepper to taste
Fresh basil or parsley, chopped (for garnish)
Instructions
1. Cook pasta according to package instructions. Drain and set aside.
2. Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook until browned and fully cooked (about 6-8 minutes). Remove and set aside.
3. In the same skillet, sauté onion and garlic for 2-3 minutes.
4. Add bell pepper and zucchini. Cook for 5 minutes, until vegetables begin to soften.
5. Stir in diced tomatoes, chicken broth, Italian seasoning, and red pepper flakes. Simmer for 5-7 minutes.
6. Return chicken to the skillet, then add cooked pasta. Toss everything together and cook for 2-3 more minutes.
7. Serve hot, garnished with fresh basil or parsley.
Notes
You can substitute mushrooms or spinach for the zucchini. For extra richness without dairy, stir in a spoonful of mashed roasted garlic or sun-dried tomatoes.
