Description
This creamy Boursin chicken pasta with tomatoes combines juicy chicken, herb-rich Boursin cheese, and sweet cherry tomatoes in a velvety sauce.
Ingredients
1 lb boneless, skinless chicken breast, diced
12 oz penne or fettuccine pasta
1 tbsp olive oil
3 cloves garlic, minced
1 pint cherry tomatoes, halved
5 oz Boursin cheese (garlic & fine herbs flavor)
1 cup heavy cream
1/2 cup grated Parmesan cheese
1/2 tsp red pepper flakes (optional)
Salt and pepper to taste
Fresh basil or parsley for garnish (optional)
Instructions
1. Heat olive oil in a large skillet over medium heat. Add chicken, season with salt and pepper, and cook until golden and fully cooked (about 6–8 minutes). Remove and set aside.
2. In the same skillet, add garlic and cherry tomatoes. Sauté until tomatoes are softened (about 4–5 minutes).
3. Lower the heat and stir in Boursin cheese and heavy cream. Mix until smooth and creamy.
4. Cook pasta according to package instructions, drain, and add to the skillet along with the chicken.
5. Toss everything together. Stir in Parmesan and red pepper flakes. Adjust seasoning if needed.
6. Serve hot, garnished with fresh basil or parsley if desired.
Notes
Use rotisserie chicken to save time.
Add spinach or sun-dried tomatoes for extra flavor.
