Description
This creamy Boursin cheese pasta with chicken is a one-pot wonder packed with garlic, herbs, and cheesy goodness—perfect for weeknights.
Ingredients
1 lb boneless, skinless chicken breast, diced
12 oz penne or rotini pasta
1 Boursin Garlic & Fine Herbs cheese (5.2 oz)
2 cups chicken broth
1 cup milk or heavy cream
1/2 cup grated Parmesan cheese
2 tbsp olive oil
3 cloves garlic, minced
1/2 tsp onion powder
Salt and pepper to taste
Fresh parsley (optional, for garnish)
Instructions
1. Heat olive oil in a large pot over medium heat. Add diced chicken, season with salt, pepper, and onion powder, and cook until browned and cooked through (5–6 minutes).
2. Stir in minced garlic and cook for 1 more minute until fragrant.
3. Add uncooked pasta, chicken broth, and milk. Stir well, bring to a boil, then reduce to a simmer.
4. Cover and cook for 10–12 minutes, stirring occasionally, until pasta is tender and most liquid is absorbed.
5. Reduce heat to low and stir in the Boursin cheese and Parmesan until melted and creamy.
6. Serve hot, garnished with fresh parsley if desired.
Notes
Use room-temperature Boursin for easier melting.
Add a splash of broth or milk when reheating leftovers.
Great with spinach, mushrooms, or sun-dried tomatoes for variety.
